The famous sea salt has been harvested for over 2,000 years by the salt miners of the medieval town of Guérande, in Brittany, following the old tradition. The salt fields where it crystallizes are made of grayish-blue clay. Thus, additional trace elements pass into the composition of the salt crystals.
