The 15° Asian knife sharpening unit is specially designed to achieve a factory-quality edge on all Asian-style knives. It is compatible with the Chef's Choice Commercial EdgeSelect Diamond Hone Model 2100 electric sharpener.
- Stage 1: Sharpening with abrasive diamonds that create micro-notches on the sides of the blade.
- Stage 2: Shaping with finer diamonds for a second, more defined angle.
- Stage 3: Polishing with ultra-fine disks that achieve an ultra-polished cutting edge.
Serrated blades can also be sharpened, using only the final stage. Ensure that the blade is clean before the sharpening process.
The full sharpening process takes approximately 1.5 minutes for a 20 cm blade. After the initial process, resharpening takes less than 1 minute.
The unit features rails for quick removal or installation on the electric sharpener, as well as easy cleaning, either by hand or in a commercial dishwasher. Maintenance of the sharpener should be done only by manually wiping it with a damp cloth.
